You're planning to put a 26" fork and 26" wheels on a frame built for 27.5" wheels? You realize what that does to a bike, right? It will drop the front end (shorter a/c on the fork in addition to smaller diameter wheel) which will steepen the head tube angle and will reduce the bike's stability, especially downhill.

Building a bike from a 27.5 frame with 26 components you may end up with a bike geometry that is 'out' and handles worse than you already have. The new frame is likely a though axle, and may have a wider (Boost) spacing, meaning the rear hub will need adapters or replacing. The bottom bracket and seat post are unlikely to be compatible.

Most brands tend to stick with the usual 44 and 51mm offsets, but there are some outliers. Fox offers a 37mm offset on its 36 Factory fork, but only on a 26 or 27.5-inch wheel size. RockShox offers 37mm offsets for 27.5-inch wheels also. Others like MRP offer their 29er forks in 41mm, 46mm, and 51mm offsets.
With the same 27.5 fork or a 26" fork with a 10mm higher axle to crown, you'll drop about half an inch. With a 26" fork, you'll drop about 0.7". Depends on the frame but I wouldn't do it with many of them under a 13.5" BB stock. But it adds a lot more stability running into things and in crappy traction corners.
I’ve put 26” wheels in a 27.5” frame and fork (in fact initially with a 26” fork), seems to work just fine—although it wasn’t really with the intention of later fitting larger wheels
